Here's a nutritious and delicious meal prep idea that includes eggs, organic beef, and a variety of vegetables.

Meal Prep: Beef and Veggie Stir-Fry with Scrambled Eggs

Ingredients

  • 1 lb organic ground beef

  • 6 large eggs

  • 2 cups broccoli florets

  • 1 bell pepper (any color), diced

  • 1 cup carrots, sliced

  • 1 cup snap peas

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil (or sesame oil)

  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • Salt and pepper to taste

  • Optional: green onions and sesame seeds for garnish

Instructions

  1. Cook the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the organic ground beef and cook until browned, breaking it apart with a spatula. Season with salt, pepper, and soy sauce. Remove from the skillet and set aside.

  2. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the broccoli, bell pepper, carrots, and snap peas. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

  3. Scramble the Eggs: Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.

  4. Combine: Add the cooked ground beef back into the skillet with the vegetables and eggs. Stir everything together and adjust seasoning if necessary.

  5. Portion Out: Divide the stir-fry into meal prep containers. Let cool before sealing and refrigerating.

Storage

This meal can be stored in the refrigerator for up to 4 days. Reheat in the microwave before serving.

Serving Suggestions

  • Garnish with chopped green onions and sesame seeds.

  • Serve with a side of quinoa or brown rice for extra carbs.

  • Add a drizzle of sriracha or hot sauce for some heat.
